First Addison, now George’s California Modern - chef Justin Cogley shows up at all the best places.
What’s on the menu? The chefs will decide close to dinnertime, after they see what’s fresh at the market.
“I think it’s a great opportunity to experience the collaboration of two chefs but you definitely have to put yourself in our hands for the night,” said Foshee, who added that Cogley’s cooking won’t be too foreign to fans of George’s, which he described as “San Diego on a plate.”
“Justin has a pretty distinct style, coastal California, showcasing the local, regional stuff like we do,” Foshee said. “That’s one of the reasons we try to pick (guest) chefs that are like-minded and work with the same kind of desires that we have for our cuisine.”
Cogley, who cooked alongside Addison chef William Bradley in 2015, is the former chef de cuisine under the late legend Charlie Trotter and was named a Best New Chef by Food & Wine in 2013.
All that success hasn’t gone to Cogley’s head, said Foshee.
“He doesn’t show up with a big entourage - he really comes in and does the cooking himself.”
