‘Power duo’ chefs DiBiase, McCabe to lead InterContinental’s culinary offerings


Two veterans of San Diego’s fine-dining scene have been tapped to lead the culinary offerings at the new InterContinental San Diego.

Chefs Amy DiBiase and Paul McCabe have joined the luxury hospitality chain, which is scheduled to open its 400-room hotel on the downtown San Diego waterfront in September.

According to an announcement Thursday, DiBiase, formerly of Laurel, Roseville and Tidal, and McCabe, most notably of Kitchen 1540 at L’Auberge Del Mar, will co-lead the hotel’s efforts.

“Merging together their respective industry expertise, culinary flairs and loyal followings, the power duo will collaborate on a signature restaurant concept and solidify InterContinental San Diego as downtown’s newest culinary hotspot,” the announcement said.

The hotel will have five dining venues, each boasting bayfront views, including a yet-to be-named signature restaurant, an offshoot of Del Frisco’s Double Eagle Steakhouse (the first in the state), a 19th floor rooftop bar, a bar on the fourth floor, and a café.

“Reconnected after briefly working together in years past, McCabe and DiBiase have a history of camaraderie and stirring up exciting new ventures,” the statement said.

McCabe, whose 30-plus years in the restaurant industry includes being named as a “rising star of American cuisine” by the James Beard Foundation, will be in charge of the InterContinental’s full food and beverage program.

DiBiase, known for her California cuisine with Mediterranean panache, will head up the signature restaurant, the pool bar and room service dining.

Del Frisco’s, part of the venerable national steakhouse chain, will open toward the latter part of the year, while the café and rooftop bar won’t debut until early 2019.
