Carmel Valley’s eastern corridor sprung to life on May 23, with long-anticipated WESTROOT tavern. This casual neighborhood gathering place in the heart of Pacific Highlands Ranch features a thoughtfully designed restaurant and bar that’s serving up fresh, inspired food crafted from land and sea in true Southern California style. Delivering a “tavern-like” experience and impressive lineup of music and nightlife, WESTROOT is staged to become a place for locals and visitors to plant their feet.

“We are excited to feed Pacific Highlands Ranch’s hunger for a neighborhood hotspot,” says local owner/operator Matt McBride. WESTROOT has answered the call of the area’s clientele with a lively, chef-driven eatery that brings scratch-made seasonal favorites to the table, including fresh seafood and meats, and produce from local purveyors. Executive Chef Jose Rodriguez and his team are turning out poke nachos, carne asada fries and street taco trios to share. And wild caught halibut, grass-fed skirt steak and soy-fried chicken sandos are just a taste of what they’ve got cooking. WESTROOT tavern welcomes families, friends and late night diners... and anticipates a weekend champagne brunch once things get rolling.

Built from the ground up, WESTROOT tavern features streamlined elements of wood and steel in handsome industrial-style décor in the form of a mezzanine, along with two patios flanked by half garage doors opening to the restaurant. Fire pits will evoke gatherings on cool evenings. And one of their two bars sits window-side, so guests can take in the view.

WESTROOT tavern is game for every sport as 30 HDTVs keep fans entertained. The libation choices flow freely, from seasonally prepared, handcrafted cocktails to beer sourced from local, world-renowned brewers, showcasing San Diego’s favorite craft.

Hours are Monday - Thursday, 11 a.m. - 11 p.m., Friday and Saturday from 10 a.m. - 2 a.m. and on Sunday from 10 a.m. - 11 p.m.
