Fifty years ago in 1965, La Costa was born as a residential resort filled with hotel rooms, a tennis court, pools and of course, the golf course that has since become a legendary feature. The likes of Frank Sinatra, Dean Martin and Bob Hope have all walked through the hallways, now a modernized resort maintaining some of the most classic attributes.
Over the five decades, La Costa has added the acclaimed spa, infinity pools and more updated accommodations. A $50 million renovation in 2013 brought a new wave of modern luxury as it transitioned to become Omni La Costa Resort & Spa, boasting two award-winning 18-hole golf courses and more than 600 guest rooms spanning 400 acres in Carlsbad.
As families, golfers, spa-fanatics and couples flock to the resort this winter, we take a look at some of the highlights the property has to offer in its 50th year of making memories.
Dining: In honor of the 50th anniversary, Omni La Costa Resort & Spa has unveiled new menu concepts at each of the restaurants led by Executive Chef Marc Therrien. At Blue Fire Grill, the resort's signature restaurant, dishes include the roasted beets with whipped ricotta; pan seared pacific halibut with white corn puree and roasted half Shelton Farms chicken with braised fennel. Bistro 65 sits pretty as the resort's more contemporary dining spot for breakfast, lunch and dinner, with standout dishes that include the heirloom tomato and burrata salad, filet mignon and espresso donut bread pudding.
Spa: The spa at Omni La Costa is a world unto itself. With its own expansive rose garden, pool and café, you might never want to leave. The spa offers massages, facials, pedicures, manicures, therapies and the Chopra Center with professional healers to help guests gain emotional, spiritual and physical balance. The spa also offers hair care, makeup, pedicures and manicures.
EDGE Adult Pool: With eight different pools to choose from, you're bound to take a swim at some point during your staycation. The EDGE Adult Pool, however, is the top choice for those looking to indulge with panoramic views of the golf course and the valley. While the rest of the resort is kid-friendly, this area is exclusively for guests 21-and-over. Relax poolside next to the romantic glow of fire pits and fountains or retreat to the private shade of the plush cabanas.
Golf: The Champions Course has been home to 37 PGA events and has been recently rebuilt to showcase more of its splendor. The Legends Course has also been renovated with a redesign of all 18 greens, as well as resurfacing of green complexes, the planting of paspalum turfgrass in the fairways and all-new bunkering. The Legends Course is more spacious than the Champions Course, with an open look, while providing a its own set of strategic challenges.
