Meatless Monday: Vegan ceviche from Como Ceviche

What’s in it? Cauliflower, red onion, cilantro, tomato, cucumber, serrano pepper, lime and orange.

Why we love it? Ceviche is a great traditional Mexican dish that would be hard to mimic with mock meat. That’s why we love this vegan version of “ceviche” - it doesn’t use fake meat to try to compare.

This pick is made with cauliflower and topped with traditional ceviche ingredients such as lime, red onion, tomato and cilantro. There is also added serrano pepper and orange, giving the dish a spicy-meets-sweet, playful bite. One of our favorite parts about the vegan ceviche is the choclo and cancha (sweet corn and toasted corn nuts) it is served with that adds a crunch in the otherwise soft-textured meal. Overall, we think it’s great to offer a vegan dish for those stopping by a seemingly seafood-only joint.
