iDessert by Jean Philippe offers futuristic, customizable confections
Acclaimed chef Jean Philippe Maury opened iDessert by Jean Philippe in July, eager to share his unique culinary confections with patrons in the San Diego area.
“iDessert is a brand new concept and one of a kind,” said Celine Maury. “At iDessert, you have the opportunity to create your own dessert, with your favorite flavors by selecting your choice of meringue, whipped cream and gelato or sorbet. You have the option to fill your creation with cake, fruits, sauce and crunches. There are thousands of possibilities since every guest can decide what to make. The combination of texture, temperature, colors and flavors is what makes any iDessert creation unique.”
iPads stationed around the restaurant allow customers to choose from more than 12 flavors of meringue crust, including classics like chocolate and vanilla, as well as more out-of-the-box flavors, such as pistachio and M&M five flavors of made-from-scratch cake, including one gluten-free option; eight flavors of house-made gelatos and sorbets, including mocha, mint and chocolate; six flavors of cream; and a wide variety of sauces, fruits and other toppings.
“To build your iDessert, you will be making your selections using one of our iPad kiosks, where our unique application will guide you through this wonderful experience,” Maury said.
Customers too timid to create their own iDessert can choose from six chef-created combinations whose names hint at the flavor experience: fruity, intense, exotic, sweet, cozy or rock ‘n roll. The cozy flavor, for example, features a milk chocolate shell with mocha gelato, vanilla cake, cinnamon cream, caramel sauce and caramelized hazelnuts for crunch. The rock ‘n’ roll flavor combination has a key lime crust with pistachio gelato, lemon cake, strawberry cream, berry sauce and blueberry compote, and is topped with white chocolate puffs.
“iDessert meringues are handcrafted daily in a dome shape and baked for eight hours to become a perfect light and crispy texture,” Maury said. “Our gelato and sorbet are made from scratch using only cream, milk and natural flavors. For example, our chocolate gelato and sauces are made with real chocolate. We are only choosing the best ingredients to give the best experience to our guests.”
The unique way that iDesserts are assembled and eaten is almost as fascinating as their sophisticated contents. The desserts utilize a squeezable tube to deliver sauce via an opening in the top of the shell, and require the use of a special spoon with a tiny hammer attachment. Also, for an additional fee, customers can opt to have their iDessert served in a Vegas Bowl, which puts dry ice underneath the creation to really bring it to life.
The restaurant also features customizable sundaes, as well as milkshakes and pre-packaged confectionaries.
iDessert is Maury’s first restaurant in the San Diego area. Maury, who has been featured on the Food Network, won two medals in the World Pastry Team Championship and holds the title of “Meilleur Ouvrier de France” (Best Pastry Chef in France), also has world-famous patisseries in the Bellagio and the ARIA Resort and Casino in Las Vegas.
iDessert is located at 1608 India St., Suite 104, in San Diego’s Little Italy neighborhood, and is open from 11 a.m. to 11 p.m. Sunday through Thursday, and from 11 a.m. to midnight Friday and Saturday.
