Glass Door’s new executive chef, Thomas Depew, has 19 years of kitchen experience. He assisted in the creation of the Fort Wayne, IN, chapter of the Slow Foods movement; learned the art of Wagyu beef from the Tanaka family of Japan; and cooked at the James Beard House in 2010.
