Meatless Monday: Beet risotto from KINDRED
A weekly feature highlighting tasty vegetarian-friendly dishes from restaurants around San Diego County.
Today’s recommendation:
What is it? Beet risotto
Where is it from? KINDRED
What’s in it? Beet risotto, fried potato scallops, sweet corn, cashew cream, scallion sour cream
How much will it cost me? $12
Why we love it? Kindred is known for its vegan cuisine, but this unique dish keeps us coming back again and again. It’s a well-executed take on healthier comfort food, using potato scallops (thinly sliced and battered) that maintain a baked potato-like softness on the inside. The scallops pair well with the homemade scallion sour cream that sits on top of them. The pink, beet risotto is thick, flavorful and sweeter than most risotto dishes. The meal is made complete with sweet corn that sits below the risotto, bringing a variety of flavor to the healthy yet savory dish.
