Share

A weekly feature highlighting tasty vegetarian-friendly dishes from restaurants across San Diego County.

Today’s recommendation:

What is it? Wild spinach and farro salad

Where is it from? Urge Gastropub

What’s in it? Spinach, candied pecans, roasted butternut squash, crispy onion strings and burrata cheese topped with a mint smoked chile vinaigrette.

How much will it cost me? $13

Why we love it: Sometimes, salads can be truly boring and, if we’re being honest, a real yawn. That’s why when you find a great one with rich ingredients and a unique taste, you remember it. That’s this salad, which has become a quick go-to of ours from Urge Gastropub, laid on a bed of greens and roasted butternut squash. The veggies are topped with a nice-sized portion of burrata cheese and unconventional crispy onion strings that add a bit of crunch and a decadent flavor to the dish. The candied pecans bring a needed sweetness to the otherwise savory salad, creating a balance of flavors that are brought together beautifully by the subtle favor of the smoked mint vinaigrette. We got our dressing on the side, but we recommend trying it atop the dish for your first time ordering.
