Not so long ago, the thought of beers left in barrels to be soured by bacteria often evoked a bitter-beer-face. Nowadays, however, tart, bug-laden beers matured in wine and spirit barrels are all the rage. Numerous local companies specialize in this type of beer, and this new startup will be the latest entrant into the barrel-aged sour subculture, using beers produced by nearby New English Brewing Co. and oak vessels procured from a wide array of wineries.

PRODIGY BREWING COMPANY

Though less than a year old, this business has already been through a lot, opening in Grantville only to have to pack its fermenters and move all the way up to San Marcos. Now settled in North County, Prodigy’s founders (who include longtime San Diego Brewing Co. head brewer Dean Rouleau) are looking into opening a tasting room or two as far away as Solana Beach to help get their hoppy and exotic beers into the hands of as many people throughout the county as possible.
