But it’s her creation titled Bacon, Whisky - regularly featured at Carnitas Snack Shack in North Park - that’s put her truffles on the map, particularly among bacon-for-dessert naysayers.
Oh yes, it can be done, and the proof is in Davis’ devilish creations. This truffle for grown-ups combines hardwood-smoked Berkshire bacon, plus some of its rendered fat, with the candy’s cocoa, brown sugar and cream base. With added depth, not to mention a kick from Kentucky straight whiskey, the only thing missing is a cigar for afterward.
