Undistributed beer: Continuous Improvement

Continuous Improvement, a Monkey Paw and Green Flash Cellar 3 collaboration (Liz Bowen)

There can only be one undistributed beer of the week. The competition is fierce in San Diego’s beer community, but someone has to take the title. This week’s best undistributed beer is...

Monkey Paw/Green Flash Cellar 3 Collaboration: Continuous Improvement

Style: Imperial Wit

ABV: 8.1%

Pair with: steamed mussels or a berry dessert

This brew is fragrant, semisweet and bread-y with a cloudy appearance. It offers a slight ounce of bite that is not bitter, but definitely sharper than your average Wit.

It’s always nice to see two local breweries doing something interesting together, utilizing their combined powers. That’s exactly what this brew is; a combination of brewing styles and personal backgrounds culminated into a unique, tasty Imperial Wit. Pat Korn of Green Flash and the team at Monkey Paw brewed up this tasty creation, and after stopping by Old Harbor Distilling during the beer’s boiling process, decided they needed to add some spices. They ended up making quite a few additions including sage, rosemary, ginger, juniper and finger limes. Hints of the lime and rosemary arrive on the nose immediately while the ginger adds a more distinct finish to this easy-to-drink Imperial Wit. This beer will be on tap for a limited time at Monkey Paw Brewing.
