Mixology 619: Trencher

Share

The 6,000-square-foot lively eatery OB Warehouse, located in the heart of Ocean Beach, offers diverse global dishes and handcrafted, warehouse-themed cocktails. One of the most refreshing drinks, the Trencher, is a must-try peanut-infused bourbon whiskey mix.

Watch as the bartender of OB Warehouse, Javi Martinez, makes this nutty cocktail.

Did you grow up in San Diego?

Yes, I’m from San Diego and so grateful. I can’t imagine my life without the beach. I tried L.A. for a couple of years, and the nightlife is great, but it was always such a hassle to get to the beach living in Hollywood.

How did you get into bartending?

I have worked in the restaurant industry for about ten years. I started off as a server and while I enjoyed doing that, I always wanted to be the one creating amazing cocktails behind the bar instead of just serving them. So I did what I had to do until I got promoted to bartending at the restaurant and never looked back.

What’s your favorite cocktail?

I love a great dirty vodka martini with blue cheese stuffed olives. Simple, but to-the-point and gets the job done right.

What’s your favorite cocktail to make?

I like to make a cucumber jalapeño margarita with reposado tequila. Staying true to my culture, I bring both tequila and spice into perfect harmony with this drink.

When you’re not mixing drinks, what are you doing on your spare time?

What is spare time?! I’m currently working at OB Warehouse as a bartender at night, and I’m a personal trainer during the day. So when and if I do have spare time, I think the first thing I’ll do is sleep. Then, I’ll head over to the beach with friends to take in the beautiful views that San Diego offers.

Trencher

Price: $10

  • 1.5 oz. peanut-infused bourbon
  • .5 oz. honey syrup
  • Dashes of house-made orange bitters
  • Garnish with orange peel

What’s the origin of the Trencher?

The Trencher, also known as a Honey Nut Old Fashioned, is a spin on the classic old fashioned cocktail. As far as pinpointing who actually crafted the first honey nut old fashioned, it’s hard to say.

How would you describe the taste to someone who hasn’t had this before?

Warm, inviting feeling of our peanut-infused bourbon whiskey with a sweet nutty finish.

What would be the key component in this drink?

Definitely the homemade peanut-infused bourbon whiskey. It takes about two weeks to infuse, but is definitely worth the wait.

What reactions do you get from customers when they try this cocktail for the first time?

Everyone is always surprised by how much they can taste the peanut flavor coming through and can’t wait to have their friends next to them try it.

How does the honey syrup add to the cocktail’s flavor?

The honey syrup balances out the smokey warm peanut flavor by adding a sweet finish.

How are the house-made orange bitters processed?

The orange bitters are an infusion of Everclear and the zest of four to five different types of oranges. We make sure there is no pith, just the peel where all of the delicious oils come from. The bitters infuse for at least four weeks.

What are some good dishes to pair this drink with?

The Trencher definitely pairs well with our crispy rare ahi salad which offers a bit of an Asian flair with the rare ahi and spicy Sriracha sauce as well as a sweet undertone with the accompanying raspberries.

What kind of experience can someone get at OB Warehouse?

OB Warehouse is a gem in Ocean Beach. It’s tucked up on the second floor on Newport Street and the design initially is a draw since it’s such a cool industrial feel. When guests join us for dinner or weekend brunch, they can expect top-of-the-line service from the moment they walk in. They are greeted with smiles while being presented with innovative menu options and an intriguing cocktail list. You will be planning your next visit before you even get to dessert.
