Bacon Week: Animal Farm cocktail

A stout drink (pun intended) ? not for the faint at heart ? the cocktail is made with lardo (cured pork fat) washed Buffalo Trace bourbon, smoked maple syrup, Averna (an amaro or digestif from Sicily), and Birra del Borgo Perle ai Porci (“pearls to pigs” ? the label even has a cute pig with a pearl necklace) Oyster stout. See? You’ve got your beer, your bacon and your cocktail, in one porky package. Bacon Week is now complete. It’s time for the artery vacuum.
