For the past four years, the Barille family of Carlsbad has built a loyal following for the house-made cinnamon rolls at their downtown restaurant, Cafe Topés. Now they’re hoping to do the same with doughnuts.
This month, the Barilles opened The Goods, an artisan doughnut bakery on State Street that specializes in ultra-fresh doughnuts in gourmet varieties including brown butter, chocolate ganache, Tahitian vanilla, stuffed Nutella and s’mores.
All doughnuts are made from scratch in small batches throughout the day, with the promise that none of these warm baked treats sit out for more than an hour before they’re sold or replaced.
Just like Cafe Topés, The Goods is a hands-on family enterprise. Barille family matriarch, Jacquie, conceived the idea and runs the shop. Her husband, Joseph, built the store and lent his expertise as a former professional baker.
The 27-seat store’s art deco/“Great Gatsby”-inspired design was the handiwork of son Jareth and his wife, Aeriel, wedding photographers who live in Portugal. And their son Joshua and his wife, Kat, who live in North Carolina, contributed some recipes and are helping manage the shop’s social media accounts.

Long before there ever was The Goods, Jacquie Barille said doughnuts have had a beloved place in her life. She and her husband met 30 years ago in a doughnut shop and she and her daughter-in-law, Aeriel, bonded over the sweet pastry orbs.
“Whenever we wanted to have a mom-and-daughter day, we’d drive up to Santa Monica to visit Sidecar Donuts,” she said, referring to the famed L.A. artisan bakery.
Four years ago, the Barilles opened Cafe Topés, a brunch-centric cafe that’s named after the speed bumps in Mexico that encourage drivers to slow down and enjoy the view.
Cafe Topés is known for many dishes, including its cinnamon rolls, but doughnuts have never been on the menu. But Barille said she saw an opportunity. Most of North County’s doughnut shops use prefabricated mixes and packaged fruit in their products, and only a few bake throughout the day to ensure freshness.
This past spring, the Barilles were working with a pastry chef on recipes for The Goods. But when the family and chef parted ways just a week before opening day, the Barilles developed their own lineup.
The shop serves yeast-raised and cake doughnuts made with fruit sourced from local farmers markets. The shop carries eight standard varieties and four specials each day, with plans to expand the lineup as business grows. Now in development: Prosecco buttermilk and butterscotch salted caramel flavors.
Each month there will be seasonal recipes (like August’s strawberry cheesecake doughnut and a pineapple fritter). There’s also one gluten-free doughnut on the menu and more to come.
The restaurant also serves coffee from Carlsbad’s Steady State and Portland’s Stumptown roasting companies. Doughnuts are priced from $3 to $3.50 each and coffee drinks from $3 to $4.
The shop is open daily from 7 a.m. to 5 p.m., or until doughnuts run out (often around 4 p.m.). The shop will also soon add evening hours on Fridays and Saturdays.
“We think there’s an untapped market out there for an evening dessert shop in Carlsbad,” Barille said.
